SHINRAI: New Sushi-Izakaya Concept At Telok Ayer Featuring Wagyu Foie Gras Don, Chawanmushi And More

Chef Desmond Fong of Sushi Yujo launches SHINRAI, meaning ‘trust’ in Japanese, expanding on the concept of ‘friendship’ in dining. SHINRAI offers a blend of traditional Japanese cuisine with modern flair, featuring aburi and charcoal-grilled specialties.

What’s On The Menu

Embark on a taste adventure at SHINRAI with appetisers like Seafood Chawanmushi with Truffle Caviar ($9.80), a combination of simplicity and luxury. It features steamed Japanese egg custard sweetened with crab meat, prawns, and scallops, topped with truffle caviar for a rich, earthy flavour.

A chef’s specialty is the Salmon Carpaccio ($16.80), which presents thinly sliced salmon sashimi coated with the chef’s homemade fragrant truffle sauce, offering a unique twist. The dish is enhanced with truffle caviar, which adds an extra layer of flavour and depth.

Warm up the appetite with exquisite sushi and maki options. Enjoy the Hotate with Foie Gras Sushi ($23.80), a torched scallop topped with caramelised foie gras and a savoury housemade sauce. Don’t overlook the SHINRAI Royal Maki ($23.80), a roll of torched salmon embracing a deep-fried tiger prawn, coated in the chef’s signature miso sauce and finished with a sprinkle of chicken floss.

Equally tempting is the SHINRAI Signature Maki ($21.80), a generous roll packed with torched salmon, grilled unagi, avocado, cucumber, tobiko, and the chef’s special touch of chicken floss.

Small bites tempt the palate with skewers like Tsukune ($6.80) that bring the finest prime cuts of grilled chicken and pork glazed with teriyaki sauce and served with an onsen egg dip. Explore different skewer options such as Tebasaki ($3.80), Hotate ($7.80), and many more.

Delight in the smoky char of grilled items like Ebi with Mentaiko ($21.80), presenting whole Tiger prawns covered in a housemade mentaiko sauce, grilled to perfection.

For mains, treat yourself to the signature Wagyu Foie Gras Don ($48.80), starring the finest A5 Kagoshima Wagyu beef, grilled and served with foie gras, onsen egg, and truffle sauce atop fluffy pearl rice.

Finish your dining experience with a sweet treat, the innovative Tofu Cheesecake ($5.80), housemade slices of goodness that melt in the mouth, layered with a sable base for added texture.
