Salted Egg Custard Bun: Here’s How To Make Your Favourite Oozing Salted Egg Pau At Home

We know most of you have been craving for this widely popular treat, either it’s from your favourite dim sum place or at Ramadan bazaars. Here’s How You Can Make Delicious Golden Salted Egg Custard Buns

This is ultimately most people’s favourite thing to order when you go for dim sum. Who doesn’t like creamy smooth salted egg custard flowing out of your bun? It’s a balance of sweet and (slight) savoury is honestly the best thing to put you in a good mood all day! Read on to find out how you can make it at home:

Ingredients (Pau): (A) 40g pau flour, 1/2 tsp instant yeast, 40ml water (B) 155g pau flour, 30g icing sugar, 1/2 tsp baking powder, 60ml water, 10g shortening, 1/8 tsp yellow colouring

Ingredients (Salted Egg Filling): 2 salted egg yolk (steamed & smashed), 50g butter, 30g icing sugar, 1 Tbsp custard powder, 40g milk powder, 20ml milk

Step 1: Mix all ingredients for the salted egg custard filling. Then, pour into 12 portions of silicon mould. Place the mould in the freezer for 1 hour.

Step 2: Starting with part (A) in making the pau, mix instant yeast with water together. Then, add it into the pau flour and sir well. Cover the bowl of mixture with cling wrap and set aside for 30 minutes.

Step 3: Moving on to part (B), mix pau flour, baking powder and icing sugar in a big mixing bowl. Add in the rest of the ingredients for part (B) as well as the mixture from part (A).

Step 4: Knead it into a smooth dough. Proceed to divide into 12 round-shaped portions.

Step 5: Remove salted egg custard filling from the mould.

Step 6: Flatten each dough at the sides while leaving the centre to be a bit thicker. Put in the custard filling at the middle and seal the ends tightly.

Step 7: Place each pau onto a paper cup and let it rest for 40 minutes.

Step 8: After that, just steam them over high heat for 6 minutes. And you’re done!
