To the pork connoisseurs, Iberico Pork is considered the “Wagyu Beef” of pork. Essentially, it is one of the highest-quality pork you can sink your teeth into! Not only does Gochi-So Shokudo serve Iberico Pork, they serve Bellota Grade Iberico Pork which is an even higher quality grade of Iberico Pork! 

Iberico Pork comes from a species of black pigs from Spain, taking 10 to 12 months to raise them to market size. For Bellota Iberico pigs, however, they are raised for two years! They are raised free-range and fed acorn to give them a thick layer of fat that’s rich in healthy omega 3 oils. Additionally, with them being free-range, their meat is more tender and juicy and simply melts in your mouth. High-quality pork indeed! 

Scrumptious Iberico Pork Dishes

Gochi-So Shokudo using Static and Aging Technology process Iberico Pork meat for 2-3 days and dry-ages it to enhance the quality of meat and intensify the natural flavour. This results in a flavour of pork that is simply to die for! 

Let’s take a look at some of the scrumptious dishes:

The Iberico Pork Collar ($16.50) uses collar part, which is a special cut from the neck end of the black pig. This dish is made simple with just a sprinkle of salt and the pork is grilled over the finest grade of charcoal (Binchotan charcoal from Japan) to enhance the original flavour of Iberico Pork. The result is seriously tender and juicy pork that explodes with flavour! 

Served with Japanese curry sauce, it adds an additional layer of creaminess and sweetness to the pork that balances out the savouriness perfectly. For the sides, the salad has a nice crunchy texture and the sauce is similar to the sesame sauce that everyone loves. A pretty refreshing palate cleanser! As for the fries, they are your pretty standard ones, crispy while still being fluffy in the middle.

Up next is the Iberico Jowl Don ($13.50), featuring thin slices of pork cheeks over a bed of fluffy Japanese pearl rice. The Iberico pork jowl is seriously tender and juicy, with a sweet-savoury sauce that elevates the entire flavour of the pork! Compared to the pork collar, the jowl is less chewy and has a better sear on the outside, giving you a pleasant char taste with each bite. With the addition of the onsen egg, the runny egg yolk adds a nice touch of creaminess to the pork. Overall a rather tasty dish!

Saving the best for last is the Bellota Loin Katsu & Cheese Roll Set ($21.50). The Tonkatsu features a crispy batter wrapped around a thick and juicy cut of pork. Just the sheer sight of it will get your mouth watering! Only fresh Japanese panko bread crumbs are used in the process of making their Iberico Tonkatsu, helping bring out the light and crispy exterior layer while keeping the meat moist and tender inside! The bread crumbs are seasoned well, complementing the flavour of the pork nicely. Just take one bite and you’ll instantly know this is no ordinary type of pork.

Bellota grade of Iberico Pork flavour is a lot stronger than your normal pork in the best way possible! Additionally. Did you know that similar to other red meat products, Gochi-So Shokudo Iberico Pork Tonkatsu can be consumed even if it’s a little pink in the centre? All of Gochi-So Shokudo Iberico Tonkatsu are deep-fried to perfection to maintain their moisture and softness. They have also done up Food Safety laboratory’s tests to ensure customers can consume with peace of mind. The slight pinkness of the pork gives a good contrast of tenderness and soft texture while still keeping it moist. For Tonkatsu fans, you will definitely love this!

Be sure to crush the sesame seeds and mix it with the Tonkatsu sauce to elevate your pork! The sauce adds the perfect balance of sweetness and tang while the sesame seeds add to the crunchiness of the Tonkatsu. Definitely a must-try! The dish also features Iberico collar wrapped in cheese and deep-fried. The perfect side dish for a tasty meal! The cheese rolls are crispy, with the pork giving it a pleasant savouriness and chewiness to it. Feel free to dip it into the Tonkatsu sauce for an added sweetness!
