The owner Martin Ong started his first stall at Tampines and was originally trained in Western Cuisine. He soon after developed his own technique for roasting pork after years of experimenting. Having opened his flagship stall at Lavender in 2021, he is finally able to use the old-school method of charcoal roast for his meats.

This cooking method gives the roasted meats a beautiful char, infused with an amazing smokiness that elevates them to another level. As most stalls use a gas oven to cook their meats, it is one of the reasons why 88 Hong Kong is set apart from the rest and continues to be rated one of the best in Singapore.

For the best of both worlds, the Roast Pork and Char Siew Rice ($7) is definitely the way to go. The roast pork is air-dried for at least 24 hours, giving it a super crispy skin after it’s roasted. Bite into the skin and you’ll enjoy the most satisfying crackling. The meat is tender and juicy, with a pleasant layer of fats that melts in your mouth. Each bite brings a burst of flavour making it seriously delicious!

Just when you thought it couldn’t get any better, in comes the char siew. The pork loin is first braised with a sweet malt sugar marinate, before roasting it to utter perfection. The glorious meat is then coated with a dark sauce, giving the char siew its rich flavour. The sauce leans more on the sweet side, with it being really flavourful and having a slightly caramelized taste.
