Like most people, Johnson Goo was unfortunately affected by the Covid-19 pandemic when it hit, forcing him to quit his job as a limousine taxi driver. He then worked as a Grab driver while joining the Hawkers’ Development Programme in October 2020. Honing his skills, he spent his eight-week apprenticeship at Changi Village Fried Hokkien Mee in Marsiling Mall Hawker Centre before opening up Chef Goo. He currently runs the stall with his wife, Chen Xin, who sometimes helps out with the preparation and serving of customers.

Offering an array of menu items, customers can choose between tasty dishes like Hokkien Mee, Pao Fan, Fried Rice, and even dishes like Braised Pork Leg Bee Hoon. However, it is their Hokkien Mee that is their signature dish. What’s unique is that Johnson also serves Korean Fried Chicken and Western Food like Chicken Chop alongside his menu, ensuring there’s something for everyone to enjoy.

Although served at $7, Chew Goo’s portion of Hokkien Mee is pretty generous, making it worth the price point. The dish is served with three jumbo prawns, clams, pork belly, pork lard, and a side of house-made sambal belachan.

Using a mix of yellow noodles and bee hoon, the noodles lack the alkaline taste, giving it a plus point. Simmered for two and a half hours, the noodles are infused with the prawn head and clam broth, giving it an amazing amount of flavour.

While some might find it a tad on the saltier side, it is honestly still based on personal preference as there are others who would call it flavourful instead. The acidity from the lime juice does however help to balance out the saltiness, making it highly recommended you squeeze it into your noodles. Additionally, there is a decent amount of wok hei and the sambal adds incredible layers of spice, umami, tanginess and sweetness, bringing you a symphony of flavours with each bite.

As for the ingredients, the prawns are quick-frozen prawns imported from Saudi Arabia. Although sweet and fresh, the prawns are unfortunately slightly overcooked while the clams are pretty decent. But of course, the star of the dish is the noodles which Chef Goo has overall executed really well.

Though not the best, it is certainly a worthy plate of Hokkien Mee to try if you’re in the area. Head down for a taste today!
