Shi Miao Dao Yunnan Rice Noodle specializes in serving Yunnan’s renowned “crossing-the-bridge” rice noodles. This particular noodle style derives its name from a captivating Chinese legend, recounting the daily journey of a woman in Yunnan who diligently crossed a bridge to deliver lunch to her husband. To maintain the noodles’ freshness and prevent them from becoming soggy, she ingeniously packed the hot soup and ingredients separately, only mixing them when her husband was prepared to enjoy his meal.

Vermicelli and a variety of ingredients are swiftly immersed in a steaming bowl of soup, cooking in just 10 seconds, hence the name ‘十秒到’ or ‘arrive in ten seconds.’ Their unique rice noodles are nearly as wide as our thick rice noodles but possess a silkier and lighter texture, making them ideal for slurping. A combination of chicken and pork bones is simmered for a full six hours, resulting in a soup with a naturally sweet and creamy-white base that’s hard to resist.
