This Ex-Masterchef Finalist’s Stall Makes Awesome Bowls Of Mee Hoon Kway At Bugis!

The owner, Aaron Wong, was one of the top five finalists in the first Masterchef Singapore series. He opened his first stall at Telok Blangah over two years ago and has since expanded to seven outlets islandwide. It’s truly a testament to how good the food is!

Aaron states that he studied how the Japanese cook Ramen and incorporated some of the techniques into his cooking. One unique thing about his stall is that Aaron partially cooks the meatballs, sliced meats, and prawn balls beforehand. This helps to ensure consistency and reduce the preparation time during peak hours. Each bowl of Mee Hoon Kway is still made to order as the soup and noodles must be vigorously boiled to achieve the soup’s creamy texture.

The Signature All-In Combo Mee Hoon Kway ($5.50) comes highly recommended by customers. The scrumptious dish comes with an abundance of ingredients like minced pork, pork slices, pork ball, and prawn ball. Customers can choose between Mee Hoon Kway or Ban Mian and can even add on extra pork balls ($0.80 per pc) or prawn balls ($1.20 per pc). For those who prefer a lighter meal, you can opt for the Mee Hoon Kway with Minced Pork ($4) in both the soup and dry versions.

What’s amazing about the soup is that it has a hint of wok hei! How Chef Aaron manages to achieve it we’ll never know, but we certainly aren’t complaining. Additionally, the soup is slightly thicker and smoother as compared to the ones we usually find in other Mee Hoon Kways. The soup has that intense pork flavour, resulting from the pork broth being simmered for hours. Every sip brings you the flavours of the pork and wok hei. Simply delicious!

Every bowl of Mee Hoon Kway also comes with an egg, vegetables, and crispy ikan bilis. The Mee Hoon Kway slices have a nice chewy texture and complement the flavourful soup nicely. The house-made pork and prawn balls are meaty and springy, while the pork slices are tender. Do dip your meat slices into the sourish old-school chilli that goes really well together. Each component of the dish is executed perfectly and the harmony of the textures and flavours is heaven in every bite!
