Make Your Own Brown Sugar Boba Milk Tea With This Simple 4-Ingredient Recipe

Nothing Better Than Chewy Pearls

Foodies, instead of buying your boba milk tea from a stall, why not try out a recipe that you can tweak and make it perfectly suited to your taste. Who knows? It might even be better than the ones you usually get!

Here’s An Easy Boba Milk Tea Recipe You Can Try

Total Time: 1 hr 10 mins
Yields: 6 servings

Ingredients:

  • Boba pearls: 1 cup tapioca starch (135g) + 2 tbsp more for adjusting and coating, 6 tbsp water (90ml), 60g brown sugar
  • Brown sugar syrup: 1 cup brown sugar, 1 brown sugar slab (70g) can be replaced by brown sugar, 100ml water

Step 1: In a small pot, heat water over a low fire and dissolve brown sugar. Make sure the sugar is completely dissolved. Then, bring the liquid to a boil and then bring it down to a slow fire again.

Step 2: Add 1/2 of the tapioca starch in and mix quickly (count 6-7 seconds). Turn off the fire or remove from fire, and add the remaining 1/2 of tapioca starch. Mix until combined and be quick during the process.

Step 3: Place remaining flour on a cutting board. Then, transfer the smooth paste on it and knead into a dough with the help of a scraper blade. It will be slightly sticky at first. but continue kneading until smooth.

Step 4: Divide the dough into 4 similar sized portions. Take one portion and cover the other 3 with plastic bag. Shape first portion into a long log (around 1.5cm in diameter), and cut it into small cubes.

Step 5: Roll and round the small cubes into small balls. It does not require to be perfectly round.

Step 6: In a large plate, spread some flour and coat each ball with enough flour to avoid it sticking to each other. You can package the extra balls in air-tight bags and freeze it for later use (up to 2 weeks).

Step 7: For the sugar syrup, melt 2 slices of brown sugar slabs and 1 cup brown sugar with 100ml water in a small pot. Heat until there are large bubbles. This step can be replaced with store bought brown sugar syrup.

Step 8: Bring a large pot of water (at least 6 times of volume of pearls) and cook the pearls for 20 to 30 minutes. Transfer the balls into cold water and it will shrink to its original size immediately. Finally, drain and mix with 2 tbsp of brown sugar syrup to avoid it sticking together.

Final Step: Drizzle some brown sugar syrup in serving cup while rotating it, so that the syrup coats the walls of the cup perfectly. Place pearls in, add milk and serve!
