Hailing from Chiang Mai, Omjai Chanta, better known as Om previously worked as a mamasan at a Thai nightclub for seven years before the pandemic forced them to shut down. However, it turned out to be a blessing in disguise as it pushed her to open Kin Sen Thai Noodle.

She wanted to serve Singaporeans authentic Chiang Mai food, especially Khao Soi, which is a signature dish of Chiang Mai that’s not easily found in Singapore. Furthermore, it has been rated the world’s No 1 soup dish by TasteAtlas!

The Khao Soi is served with springy egg noodles, rich Thai coconut curry, chicken drumsticks, and crunchy vegetables, topped with crispy fried egg noodles. The noodles are springy, with the fried noodles and veggies adding a pleasant contrast of crunchiness. Although the noodles are without the alkaline taste, the egginess of the noodles does get overpowered by the curry.

The red curry paste shines through, with a delightful balance of sweetness and acidity with each sip. Additionally, there’s a good kick of spice that builds and lingers without being too overbearing. For those who can handle their spice, feel free to add in their Thai chilli for an extra kick.

Despite being a coconut curry, it’s not as rich and thick as you would expect, making it less heavy and jelak. As for their drumsticks, they are tender and absorb the curry well, bursting with curry goodness.

For something on the lighter side, their Thai Pork Noodle is robust, with a flavour profile similar to your Thai herbal boat noodles. The pork rib is braised till tender, with the skin having an amazing silkiness while the pork ball is seasoned well with an amazing bouncy texture. A comforting dish that’s perfect for any rainy day!
