Embark on a culinary trip to discover the best vegetables from Hokkaido, as envisioned by Daniel and Tamara Chavez and supported by JETRO. Enjoy a unique combination of real Peruvian and Spanish cuisine, masterfully prepared to highlight these distinct ingredients. From now till March 3, experience the flavours of Hokkaido with our seasonal dishes, which will be offered exclusively at CANCHITA Peruvian Cuisine and TINTO Spanish Restaurant.
At the CANCHITA Hokkaido Festival, indulge in four delectable dishes that combine Peruvian traditions with Hokkaido’s excellent scallops and sea cucumbers.
Kicking off the culinary journey is the Ceviche de Conchas ($32++), featuring succulent chunks of scallops and assorted seafood, marinated and “cooked” in tiger’s milk—a zesty blend of lime juice, chili peppers, onions, and cilantro. This refreshing ceviche is accompanied by a luscious sweet potato purée, boasting a velvety texture that beautifully complements the delicate flavours and textures of the seafood.
Don’t overlook the Conchas a la Parmesana ($30++/piece), a must-try dish where Hokkaido scallops are roasted and elegantly served in their shells. Drawing inspiration from Peruvian-Italian Bachiche cuisine, dating back to the 1950s colonial era when Italians migrated to Peru, this culinary fusion combines the scallops with a delightful topping of gooey parmesan cheese – a nod to the enduring Italian influence on Peruvian cuisine.
Following that is the Ocopa ($32++), showcasing Hokkaido potatoes bathed in a Peruvian Andean mint sauce. With a velvety smooth texture and a vibrant flavour derived from the Andean mint, this sauce is served piping hot, complemented by the addition of nuts and Hokkaido cheese.
To conclude the feast, indulge in the Fresas Nieve ($16++) dessert – a harmonious pairing of the freshest, juiciest Hokkaido strawberries with decadent Hokkaido gelato infused with the iconic dulce de leche, delivering a sweet and creamy finale to your culinary adventure.

Drawing inspiration from Daniel and Tamara’s diverse culinary adventures in Spain, TINTO brings to life the vibrant tapestry of Spanish cuisine, featuring an array of soul-warming tapas, paellas, fideuás, Spanish wines, and more. As part of the Hokkaido Scallop Festival, TINTO invites guests to indulge in a trio of dishes showcasing Hokkaido’s premium scallops and sea cucumbers.
Kick off your culinary journey with the Scallop Salad ($32++), a vibrant medley of flavours featuring fresh cherry tomatoes, crunchy baby zucchini, and savoury roasted shallots. The addition of bottarga and toasted hazelnuts provides a delightful crunch, while juicy sweet chunks of Hokkaido scallop are perfectly complemented by a tart cava vinaigrette.
Next, savour the Scallop & Mushroom Skewers ($35++/3 pieces) – an explosion of umami flavors with grilled Hokkaido scallops paired with earthy mushrooms. Enhanced with egg confit, Japanese corn, and green asparagus, a hint of mushroom oil takes the dish to new heights.
To conclude your dining experience, indulge in the Fideuá de Vieiras ($44++) – a tantalising dish featuring fluffy Spanish saffron rice and roasted cauliflower for a delightful contrast in textures.
