Ayam Bakar of this type takes a while to prepare. With the number of different sauces, it takes a lot of time to ready every component! Firstly, their Lauk Lemak is cooked low and slow. This is to ensure the lemongrass, Thai Bayleaf and other seasonings bloom and turn fragrant! The green chilli sauce is simple made by grinding different chilli and other spices together. The chicken itself its grilled and charred to give the dish smokiness!

The Ayam Bakar Colo-Colo ($7.50) is a beautiful medley of different flavours! It has freshness from the greens, peppers and chilli. It has sweetness from the Kicap (Sweet soya sauce) and it has coconut and creaminess from the Lauk Lemak. The chicken is grilled to perfection! A sweet and charred skin with juicy meat will take your breath away. You put that all together and you’d be having a small bite of heaven!
