The King of Crustaceans is honoured with entire Australian lobsters lending their flavour to a special local yam cake handmade by the chef. To add depth and richness, the dish is generously topped with Chinese waxed sausage, offering satiation and satisfaction.

4. Nanjing Salted Duck ($20)

A refreshing cold appetiser featuring duck that undergoes thorough marination with Sichuan peppercorn, spices, and salt, followed by air-drying in a temperature-regulated fridge for a minimum of 36 hours.
