Soon Lee Porridge first started out at Bukit Timah in 1980 before moving to Clementi 448 Food Centre. The stall is currently run by the third-gen owner, who has been learning the craft since he was 9, before officially working at the stall when he was 20. Every morning, one and a half hours is needed to prepare the huge pot of plain porridge before making them into individual portions.

Upon order, they will scoop a portion of the plain porridge and will add their secret sauce to it, giving the porridge its incredible flavour. Compared to your typical Cantonese-style porridge, Hainanese porridge is also thick, but you can still see the rice grains, which are a mixture of old and new rice.

The Pork Porridge ($4.20) is light and has a pretty good consistency, with a delightfully smooth texture to each bite. Flavourwise, there is honestly no need for any extra soy sauce as it’s already incredibly flavourful on its own. Served with chai poh, it is definitely a unique ingredient you typically don’t find in porridge, Additionally, it gives a pleasant saltiness and crunch to the dish.

Served with minced pork and pork liver, the minced pork is tender but is slightly on the salty side when eaten on its own. It would be best to have it with the porridge for a good balance of flavours. As for the pork liver, it has a good bite and a nice livery flavour. However, it can be a tad overwhelming for some who aren’t fans of pig organs.

Served with a raw egg, it adds a touch of creaminess to the porridge while the garnish of spring onions and fried shallots gives an additional layer of texture. Each spoonful is extremely comforting and be sure to give it a good mix for an incredible burst of flavours!
