One of the more popular stalls at Serangoon Gardens Food Centre, the long lines daily continue to remain a testament to Soon Huat’s popularity. Besides their Pig Organ Soup ($4.50/$5.50/$6.50), Soon Huat also serves Pork Belly Soup ($5.50), and Handmade Meatball Soup ($5.50), including accompanying dishes like Braised Pig Trotters ($5) and Pig Intestines ($4/$5/$6).

Served at $5.50 (with rice additional $0.50) for the medium portion, the soup is packed with ingredients and they are generally larger compared to others. The soup is flavourful, having a prominent yet not overpowering tanginess from the suan cai (preserved vegetables), with a pleasant aftertaste of fried garlic that makes it truly unique.

The pork belly is delightfully tender but the pork slices however are slightly tough. As for the organs like the intestines, liver, and stomach, they are all tender yet chewy and have a nice bite to them. Additionally, they smell and taste clean, making them very palatable and stand out from other stalls.

Be sure to dip into their chilli for an incredible burst of spice and sharpness from the vinegar, which helps to alleviate the porky taste of the ingredients as well.

Perfect for meat lovers, the Braised Pig Trotters ($5) are tender and flavourful but sadly lacking in sauce. There is however a good ratio of fats to lean meat, with the layer of fats melting beautifully with each bite. You definitely can’t resist going back for more!
