Opened by Han and his fiance Chelsea, Han, who was an ex-Burger & Lobster chef has actually been working in the food industry for over ten years. Although his expertise lies more in Western cuisine, he decided to sell Bak Chor Mee out of his fiancee’s love for it.

As No.25 Minced Meat Noodle is named after the couple’s anniversary date, it brings incredible and beautiful meaning to their business venture. Why serve tonkotsu broth you might ask? Well, the couple wanted to capture a modernized version of the traditional flavour, ending up with their crowd-favourite tonkotsu broth.

For the Signature Minced Meat Noodle ($8), enjoy the best of both worlds with your classic bowl of BCM, and a large bowl of their soup filled with a generous amount of ingredients. The noodles are al dente and the flavours are perfectly balanced.

Additionally, the homemade chilli sauce delivers an amazing kick in each bite. Served with an abundance of minced pork, pork lard and crispy sole fish, every bite is a beautiful medley of flavours and textures. The pork lard is certainly a stand-out, being incredibly crispy and bursting with umami!

Moving on to the star of the dish, the tonkotsu soup is served with pork liver, fish dumplings, fish maw, and even bits of dried sole fish. The amazing broth is boiled for at least eight hours using pork bones and chicken feet, with powdered sole fish being added for extra umami.

What you get is an extremely robust flavour that leaves you wanting more with each sip. Even the ingredients are executed well, with the pork liver being creamy and tender. As for the fish maw, it has an amazing bite while the handmade dumplings have the perfect bouncy texture and are incredibly flavourful.
