Niigata: A Customisable Donburi Concept Inspired By An Ex Fine-Dining Chef At Under $10!
Introducing Niigata, the latest Japanese restaurant in Singapore. Strategically located at Canberra Plaza, this spot offers a wide selection of restaurant-quality donburi. Niigata is actually an ex fine-dining chef’s creation. These donburis are expertly created by Chef Daniel. Previously attached to Shinzo and Hinoki, the fine-dining chef is well-regarded for his cooking skills.
Armed with two decades of experience in Japanese cuisine, 53-year-old Chef Daniel has always been wanting to introduce fine Japanese cuisine at affordable prices. “At Niigata, this is my opportunity to do so,” Daniel explains, “And customers can also customise how they like their bowl of Donburi at under $10!
There are many choices of Donburi to choose from including the signature dish, The Trouble Maker. The pork bowl is made with flavourful Shiroubuta, a premium pork that is notable for its tenderness and supreme flavour. To elevate the flavour, it is infused with truffle, too. The other highlight of the dish is the addition of a torched mentaiko egg, expect a burst of flavour when you bite into the well-seasoned egg.
Ranging from $7.80 – $15.80, Niigata’s Donburi specialises in a variety of cuts and flavours of the hog, thus each bowl is a savoury concoction of meats, Niigata Japanese rice, crunchy greens, and intricate sides. The Belly Lovely creation is another of Chef Daniel’s signature, with generous servings of thick slabs of braised layered pork belly. It’s so good, it will melt in your mouth.
We all love being in control of what we eat right? This is why Niigata offers extra flexibility when it comes to crafting our own Donburi. To Build-Your-Donburi, you can select from over 12 different choices of meat or fish, 3 types of rice (Niigata white rice, brown rice, and seasoned rice), and 6 choices of nutritious sides! Other Japanese staples like Udon, California Maki and Karaage are also on the menu. Despite being restaurant-quality, the price is affordably ranged from $2.00 to $15.80.

When asked about his confidence in the Niigata Donburi concept, Chef Daniel indicated that he is excited about the brand new concept, and that he is happy that he is one step closer to bring quality Japanese food to the masses.
