Established in January this year by owner, Nick Tan, Charcoal Claypot Chicken aims to bring restaurant-quality dishes to Singapore’s heartlands. Recognizing the rarity of coconut chicken soup among local hawkers, his head chef wanted to introduce the dish to the menu.

Initially hesitant, Nick was ultimately won over after tasting the dish and loved it himself. The preparation is a meticulous two-hour process involving the use of coconut water and herbs to achieve its rich-flavoured broth.

Charcoal Claypot Chicken’s menu features a plethora of Charcoal Claypot Dishes including Traditional Pig’s Stomach with Kampong Chicken ($30), Spicy Mala/Braised Kampong Chicken ($28), and “Guangdong” Signature Braised Beef Organ ($38).

This unique and delectable broth marries the sweetness and freshness of coconut with the savouriness of chicken. Though primarily sweet and clean tasting, the flavour of the chicken elevates and brings balance to the broth, distinguishing it from plain coconut water.

Complemented by kampong chicken, the meat is tender and retains its natural flavour while the added water chestnuts and coconut flesh provide a pleasant crunch.
