Helmed by husband-and-wife duo, MJ and Amy, Braise has already become one of the most popular stalls at this hawker centre despite only opening in August, 2021. Why sell their Braised Pork Rice so cheap? It’s because they wanted to give back to the community and they felt that their other dishes could make up for the affordable price.

Most customers would mistake Braise’s dishes for Taiwanese Lu Rou Fan but in fact, they are actually a Singaporean spin on it. Braise essentially serves one dish which is Braised Pork Rice, but they also offer different cuts in sets like the Pork Shank ($4.50), Pork Belly ($5.50), Pork Rib ($6.50), and Pork Cheek ($8.50). Each set includes an Ajitsuke Tamago (ramen egg), pressed tofu (tau kua), tofu puff, shiitake mushrooms, black fungus, and some greens.

Braised Pork Rice ($3.50)

The Braised Pork Rice is served with a mix of pork ribs, belly, and shank, with a side of vegetables and half of an Ajitsuke Tamago. The pork is braised for hours in a pot mixed with herbs, spices, and wines, making it incredibly tender and flavourful, with each piece melting beautifully in your mouth. Doused with a luscious and sweet sauce, the sweetness isn’t too overpowering, allowing the delicious flavour of the pork to still shine through.

The rice is braised with the sauce as well, giving each scoop a burst of flavour. The chilli elevates the dish, adding spice and tang to balance out the sweetness of the sauce. Don’t be fooled by the chilli as it builds and starts to pack a punch after a few bite. Served with a substantial amount of pork for only $3.50, this value-for-money dish is definitely a must-try!

Braised Pork Cheeks Set ($8.50)

Served with a generous portion of pork cheeks, the cheeks are seriously tender, yet they still have a pleasantly chewy bite to them. Additionally, the flavour of the pork is more pronounced compared to the Braised Pork Rice. The “porky” taste isn’t overwhelming however and the sauce and chilli help to balance it out.

The tau kua absorbs the sauce really well, giving it a burst of sweetness while still retaining its natural flavour. If you’re willing to splurge a little more, this is definitely a dish worth trying out.
